Honey-Soy Lollypop Drumettes

I've been serving these magical pops at parties since the 90's, they are always a hit!

Ingredients:
Kosher salt and freshly ground black pepper
2 pounds chicken drumettes (Frenched-see video below)
Marinade:
1 cup low sodium soy sauce,
1 heaping tablespoon grated fresh ginger
3 tablespoons chopped fresh cilantro leaves
3 cloves garlic, minced or pressed
1 lemon, juiced
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1/2 cup honey
Sesame seeds for garnish
More Cilantro for garnish

French drumettes to create a lollypop. (See video below)
Combine drumettes with soy sauce, ginger, cilantro, garlic, and lemon juice in a gallon ziplock bag, remove air, place in bowl making sure the chicken is covered with marinade, refrigerate 3 hours.
Remove wings from marinade and pat dry; season with salt and pepper. In a large frying (or cast iron) pan over medium/medium-high heat, melt the butter in the olive oil. When the butter stops foaming, add the honey and chicken and fry until browned on each side, about 5 minutes. Continue cooking the wings, turning them over often to coat them as the glaze reduces. Turn frequently as to not burn. Cook until the wings are sticky and cooked through. About 10 minutes total. Garnish with sesame seeds and cilantro and serve. If checking temp with an instant read, take chicken to 170ºish.
